Gluten-Free Zucchini Bread - Gluten free baking

WHEAT & GLUTEN-FREE Zucchini Bread | Fresh Baked WHEAT & GLUTEN-FREE Zucchini Bread!

Zucchini Bread Recipe1 egg


3 tbsp conola (or vegetable) oil
2 tbsp shortening
1/4 cup sugar
1 tsp vanilla extract
1/2 cup potato starch
3/4 cup cornstarch
1 tbsp baking powder
3/4 tsp baking soda
1/4 tsp salt
3/4 xanthan gum
1 tsp cinnamon
1/4 cup milk
1 cup zucchini, grated and packed

Preheat oven to 350 degrees. in large bowl combine egg, oil, shortening, sugar and vanilla. Mix well. Add all dry ingredients and milk. Mix well. Add zucchini and mix well.
Pour batter into a greased 8 x 4 loaf pan (or 2x4 loaf pans (4) bake 30-35 minutes) bake 45-50 minutes. Cool on rack and serve. Enjoy!
